Smoked eel. There is a considerable difference in the taste of eel whether it is silver eel, broad-headed eel or point-headed eel. We serve the silver eel whith juniper berries in order to retain its juices and delicious taste of eel. We leave the skin on, because the skin also is a delicacy. The delicate eel fat just under the skin is also edible |
